Daterra Farms Relationship Coffee

Daterra is the acknowledged leader in producing immaculately processed natural dried Brazilian coffees that are extremely sustainable. Daterra’s uniqueness lies not only in its environmental philosophy: protection of wildlife, water resources, and native forests, but also in its social responsibility, promoting labor rights. Their Penta processing system is a five step system that delivers amazing results in the cup. At the Penta Preparation Mill, the cherries are sorted by size, maturity stage, and density. Each cherry batch is identified and tracked throughout the whole process. Barefoot worked very close with Daterra this year to develop a unique coffee selection for our use.

Daterra’s website Daterra’s plantations are located at an average altitude of 3,800 ft (1,150 m) under a stable temperature of around 70ºF (25ºC), which constitutes the perfect environment for Arabica Coffee production. Furthermore, the dry season during the harvest makes this region unique for the best Arabica coffees.

The plantations, settled in different areas, are divided into 215 mini- farms and further subdivided into 2.816 blocks called “quadras”, each of which is planted with a specific coffee variety.

This plantation system ensures accurate monitoring and constant traceability of each quadra’s historic track of rainfall, cultivation procedures and productivity.

Rainforest Alliance profile of Daterra

Arabica variety has always been the “king of coffees”. Its richness and balance are due to more than 120 aromatic oils and more than 300 chemical elements, delivering an exotic and complex cup of coffee.

In partnership with IAC (Agronomic Institute of Campinas) and Illycafé Daterra has carried out deep research to elect the varieties yielding the best cup. Typica - original natural coffee from Ethiopia. Bourbon - mutant of Typica from the Island of Bourbon. Caturra - natural mutant of Bourbon originated in Brasil. Mundo Novo - natural cross pollination of Sumatra and Bourbon in Brazil. Red and Yellow Icatu - back cross of Bourbon and Canephora Tetraploid. Red and Yellow Catuaí - Back cross between Mundo Novo and Caturra.

The Penta System® is a set of technological procedures developed by Daterra engineers to ensure quality consistency. Penta System® was based on the 6 Sigma and Total Quality Program. The rigid inspections of the beans yield superb coffees.

The quality delivered is, the most important output of the system. Every stage of this unique processing system has been designed to only select the coffee beans that match the high quality window of Daterra. From picking to shipping, only the perfect beans remain in the process.
